This cauliflower fried rice is a healthier twist on a classic dish, featuring riced cauliflower stir-fried with savory soy sauce, aromatic shallots, vibrant vegetables, and scrambled eggs, garnished with scallions and sesame seeds for added flavor and texture.
1. Cauliflower (or pre-riced cauliflower) 2. Reduced-sodium soy sauce 3. Mirin 4. Neutral oil 5. Shallots
Cut cauliflower into florets and pulse in a food processor until rice-sized pieces form. Alternatively, use pre-riced cauliflower. Squeeze excess moisture out of the cauliflower using a clean kitchen towel.
Stir together soy sauce, mirin, and sugar in a small bowl.
Heat oil in a large nonstick skillet or wok over medium-high heat. Cook shallots until golden brown, then transfer to a paper-towel lined plate.
Cook beaten eggs until scrambled, then transfer to a small bowl.
In the same skillet, cook carrots, garlic, and peas until warmed through. Add cauliflower and cook until slightly softened.
